Keto Pesto Chicken Casserole with Olives & Feta Cheese

  • 25 ounces of chicken breasts or thighs
  • 8 ounces of diced feta cheese
  • ½ cup of olives, pitted
  • 1 finely chopped garlic clove
  • 2 ounces of butter
  • 1 ½ cup of heavy whipping cream
  • 3 ounces of red pesto or green pesto
  • Salt and pepper

For Serving:

  • 4 tbsp of olive oil
  • 5 1/3 ounces of leafy greens
  • Ground black pepper and sea salt

  1. Start by preheating the oven to 400 degrees Fahrenheit.
  2. Cut the chicken into smaller sized or bite-sized pieces and season them with salt and pepper.
  3. Add butter to a skillet and fry the chicken pieces on medium-high heat, in batches.
  4. Meanwhile, mix the heavy cream and pesto in a bowl.
  5. When the chicken is golden brown, place the chicken pieces in a baking dish together with the feta cheese, olives, and garlic. And then add the pesto.
  6. Bake for 20 to 30 minutes or until the dish turns light brown and bubbly on the edges.
